Alzheimer’s disease (AD) is the most common neurodegenerative disorder recognized by modern medicine. Today, much research of the disease is focused on anti-inflammatory treatment strategies involving diet. Supporting the findings of this research, Memory Care of Little Rock at Good Shepherd has created a ground-breaking approach in food sourcing that is antibiotic, hormone and chemical free. We’re pleased to be offering a non-processed, gluten free menu designed and prepared by our culinary staff. Notably the menu adheres to the principals of an anti-inflammatory diet yet still accommodates the “food familiarity” our residents expect.
Our culinary experts teamed with Dr. Morgan Sauer, Corporate Medical Director, to develop a unique approach to recipes and dietary requirements that are best suited for the memory care resident. Aspects of our approach include stewing and simmering associated with the Mediterranean diet, which maintains the antioxidant content of food. Instead of boiling vegetables which changes the DNA content, we steam, pan fry or bake them to preserve nutrients. Protein-energy undernutrition is common in the Alzheimer’s disease population so we source meat from animals raised without the use of hormones, antibiotics or pesticides and make our own chicken broth used as a base for many of the dishes we serve to insure a high protein intake.
Our advanced dietary approach, along with our well-known promotion of the benefits of hydration for memory care residents, as demonstrated through equipping our memory care residences with specially designed hydration stations, are ways we practically encourage and promote better health in memory care residents. Nutrition and dietary strategies are just another example demonstrating our 100% dedication to memory care.
